A Famous Origin Does Not Replace Lot Evaluation
Gayo Arabica green coffee beans are associated with the highlands of Aceh, Indonesia. For roasters and importers, evaluating this coffee means understanding its origin, processing, physical condition and performance in the cup.
Two coffees from the same region may still perform differently in your roasting program.
Confirm the Processing Method
SIC’s Gayo Arabica offering includes semi-washed and full-washed options, subject to availability.
When discussing processing, ask the supplier to explain the actual steps used. Terminology can vary between suppliers, so a process description is more useful than relying on a label alone.
Where the information is available, discuss harvesting, processing, drying and storage conditions.
Review the Physical Specifications
Before ordering, agree on the relevant physical parameters.
These may include screen size, moisture, defect assessment, foreign matter, packaging and lot identification. The specification should reflect your purchasing requirements rather than a generic description.
Ask which grading method is used and how the results will be documented.
Evaluate Samples Against Your Intended Use
Are you sourcing for a single-origin release, a recurring blend component or another roasting application?
Your intended use affects what you need from the coffee. Evaluate samples through your own roasting and cupping process, using consistent conditions so that comparisons are meaningful.
Flavor descriptions can help introduce a coffee, but they should not replace sample evaluation. Record the results and confirm how the approved sample relates to the commercial lot.
Plan Beyond the First Order
For recurring purchases, ask about expected availability and whether future lots may differ.
Agricultural products naturally vary. The practical goal is to agree on acceptable parameters, communicate changes and approve replacements when necessary.
